calcium is pretty straight forward, i just need to get clear bounds.
a) so, i thought i was setting a high rdi at 1300 mg, but it turns out that this is the daily value on all of the labels. to be clear, it's higher than the 1000 mg rdi set for adults; 1300 mg is the rdi set for teenagers. so, i thought this might be a problem, but all of the percentages should actually fall nicely into line.
b) i have set a low upper limit of 2000 mg out of caution regarding arterial calcification. this is normally observed for seniors; an upper limit of 2500 mg is normally set for adults between 20 and 50.
as of now, and this doesn't include water, my total calcium intake is 988 mg for the fruit bowl, 949 mg for the pasta bowl and 323 mg for the eggs. that's 2260 mg, which is technically in a safe range for my age group.
but, i set it low out of caution for a reason. so, let's look at this more carefully. what's the evidence of high calcium intakes being dangerous, anyways? is that something i should revisit? might i even want higher calcium levels for teeth?
i mean, shouldn't my hormones regulate my calcium plasma levels, anyways?
the way the lpi (https://lpi.oregonstate.edu/mic/minerals/calcium) explains it is that your body will basically raid your bones for calcium if you don't consume enough in your diet. so, you have the choice between eating enough calcium, or slowly rotting away like a holocaust victim. unfortunately, your body won't really reconstruct bone density as an adult, either - although maybe we can figure that out with gene editing. once it's gone, it's gone; you have to maintain it or lose it. they set the amount at around 1000 mg for most adults (due to concerns about prostate cancer) and then boost it that much higher for older adults. this is not exactly in contradiction with the nih, which sets a lower rdi for seniors due to arterial calcification concerns.
but, i'm not concerned about prostate cancer for obvious reasons, and i'm not convinced of the threat for calcification in otherwise healthy people. i'm far more concerned about teeth & bones and making sure i'm not raiding my skeleton for calcium when i could be eating it.
understanding that bone loss is largely a one-way ticket probably has a lot to do with why studies regarding the efficacy of calcium supplementation on bone loss (putting the arterial issue aside) have been inconclusive; if you've lost the bone, you've lost the bone. supplements won't bring it back. getting enough d & calcium when you're young and keeping with it just isn't the same thing as starting when you're 55 because your doctor has identified you as at risk, and you shouldn't expect results from giving supplements to older people that essentially contradict the basic science underlying the process. but, what that also means is that the lack of results from these studies isn't an argument against sufficient calcium intake when younger, but rather an argument in favour of it. but, i'd like to see longer term studies done measuring the effects of calcium intakes over very long periods.
so, i'm left to conclude that, if i'm solely concerned about preventing bone loss and not concerned about arterial calcification, i want to keep calcium levels high by consistently consuming it at sufficient levels. that is, i want every single meal to be high calcium.
but, what about arterial calcification?
as suspected, when you have too much calcium in your blood, a hormone is released that restricts absorption. so, the concern should really be to avoid eating too much calcium too fast (as that could lead to build-ups before your body can adjust), rather than to avoid eating too much, in total. slowly eating excess calcium should just lead to lower absorption, meaning you shouldn't be that concerned about it. it would follow, then, that concerns about arterial calcification should really be restricted to the use of supplements (or chugging milk, i guess).
so, i think i'm ok with the mid-level daily rdi, but i want to get a better bounds on a per-meal upper limit. i'm getting 70+% of the 1300 mg rdi per meal - nearly the entire 1000 mg rdi, twice over. is that too much at once?
and, the answer seems to be that even that is mostly taken care of by your body, which can absorb about 500 mg at a time and mostly discards the rest.
Excess calcium intake from foods alone is difficult if not impossible to achieve.
so, how did they get these numbers, then?
if you follow that nap link above,
- the 2000 mg limit for older people is determined to minimize concerns around kidney stones, and specifically for supplements. apparently, there's a concern with older people taking high potency calcium supplements and just ending up with kidney stones from it. oops. if you're not taking supplements, that number is not useful. i would have assumed it was more to do with calcification...
- the 2500 mg limit is a midpoint between the 2000 for older people and the 3000 for younger people. while i'm following the logic about renal functions slowly degrading over time, i'm still not taking supplements, and am still not concerned about them turning into stones.
so, my caution seems to have been misplaced.
everything i'm reading says that calcium supplements are a bad idea, all around, and you should probably completely avoid them altogether. but, the corollary is that there's almost no meaningful concern regarding dietary calcium intakes, so long as you're healthy enough that your body can regulate them. the primary concern is arterial calcification, and that should only happen if you overwhelm your internal regulatory mechanisms by taking way too much too fast - and you'd have to even try really hard to do it, because the internal regulatory system is pretty robust.
we may look back at calcium supplements as being a really stupid idea.
what i'm going to do is the following:
1) set the upper limit at 3000 mg/day (231%)
2) set the per meal limit at 1000 mg (77%)
and, here's the data:
water:
windsor's water is about 100 mg/L of calcium carbonate, which is about 40% calcium by weight:
algae:
remaining data from the usda or a label:

disclaimer:
i've gone to town with a few things - i'm not making up vitamins but rather filling things in. i mean, there's all these "missing vitamin names". what were they, exactly? it also gives me an excuse to work in a few things like choline that are hard to otherwise define as they are essential in some amount but not technically vitamins.
note that these numbers are scavenged and should be interpreted approximately. that's partly why i'm aiming to overshoot on most of it.

diet options:
daily:
2 ) pasta salad bowl:
- one tbsp of imitation bacon bits (isoflavones, maybe)
- olives?
- red clover (if locatable or foragable, for phytoestrogens)
- alfafa?
- rice bran is similar to sunflower in b5, but lower in omega-6 and lower in choline. also, less e. it would be better if i find myself strictly concerned about b5, but in the pasta bowl. this seems unlikely.
- dried whey is a little lower in both b5 & higher in choline, but also has a little b12 & has almost no fat. it's almost like the missing part of the yeast. i'm having trouble finding it though and don't think the isolate available at bulk barn is comparable. it seems to be largely seen as a waste product in yogurt production. it may be broadly useful across plates.
- broccoli?
3) eggs:
- salami (45 g) (25% b1, 12% b3, 5% b5, 11.5% b6, 0% b9, 20% b12)
- rice (100 g) (60% b1, 35% b3, 4% b5, 6% b6, 69% b9)
