sodium is already mostly entered into the chart, and is entirely from labels or the usda. so, what i need to focus on is lower and upper limits, as well as ratios to other minerals, like potassium.
in fact,
Sodium is often blamed for boosting blood pressure while potassium is praised for keeping it in check. It really doesn't make sense to look at these two minerals separately, though, since they work in tandem throughout the body. The ratio of sodium to potassium in the diet may be more important than the amount of either one alone.
i'm going to take their advice.
what's the dry recs, here, from the experts?
sodium
ai: 1500 mg
ul: 2300 mg
potassium:
ai: 4700 (was 3400)
ul: n/a
ratio:
4700/2300 = 2.04347826087
but, then i thought to wonder about water. given that i drink a lot of water, does that mean i should aim for a higher than normal sodium intake?
the answer is "no", due the presence of a hormone called aldosterone:
Sodium homeostasis is maintained over a wide range of environmental and dietary circumstances, primarily through the action of the hormone aldosterone on the renal tubules of the kidney. When sodium intake is high, the aldosterone level decreases and urinary sodium increases. When dietary sodium intake is low, the aldosterone level increases and urinary excretion of sodium rapidly falls almost to zero. Although the kidney can thus conserve sodium, there is some obligatory loss via feces and sweat. Sodium deficiency resulting from low dietary intake thus does not normally occur, even among those existing on very low sodium diets (Page, 1976, 1979). Even relatively heavy sweating does not normally create a need to provide salt supplements (Conn, 1949). The body may be depleted of sodium under extreme conditions of heavy and persistent sweating, or where trauma, chronic diarrhea, or renal disease produce an inability to retain sodium (Gothberg et al., 1983). These latter conditions require medical attention.
however, i'm also on testosterone suppressors that may reduce aldosterone levels, although they shouldn't be the primary factor in aldosterone production.
i happen to have a test coming back in the next few weeks that will measure both sodium and potassium levels, so i should wait for that to react. but, if i have to boost my sodium levels, it would be as a result of a reaction to a drug, rather than due to the diet. and, i hope it doesn't come to that, because i've been trying to get off these drugs for years now.
the problem with the medical system in canada is that the doctors are all religious conservatives. i have funding, but nobody wants the money. it's quite frustrating.
for now, i think it's best to stick to the requirements, verbatim, except to set a more restrictive upper limit than 2300 mg/day. the heart experts actually suggest you should aim to strive to get as close to 1500 g/day as possible, so i'm going to set bounds of 35%. i'm also going to set a total ratio of 2.5.
so, these are my actual bounds:
potassium:
ai: 4700.
requirements: >40% (1880 mg) /meal, >120% (5640 mg) total.
ul: n/a
let k be actual potassium amount.
k/na ratio:
k/x > 2.5 <-----> x < k/2.5.
this shall be both per meal & total (which follows).
sodium
ai: 1500 mg
requirements: >30% (500 mg) per meal & >100% (1500 mg), total.
ul: < 35% (525 mg) per meal & < min(k/2.5, 153% (2300)) mg total
the first two meals are doing well, but i need to balance this for the eggs. the juice should help, and the salami should boost both, but it's still going to be a little off. this may be another reason to move to chicken or turkey. i'll figure that out when i get there.
so, here's the data, then.
everything is from the usda or a label except where noted.
sodium
water:
there is a law in ontario that says they have to report to the county health unit if levels exceed 20 mg/L. i can find no evidence of this being done in windsor. so, i initially pencilled in 20 mg/L as an upper bound. there is also sodium in the diluted toothpaste - .125*(((.2299-.104)/100)*1000 + ((1.1-.05)/100)*1000) = 1.469875. but, then i found the following source, which lets me take an average of data from lakes huron (3.86) & erie (8.58):
algae:
there is a study here that i can use for sodium, phosphorus, sulfur, potassium, calcium, iron, copper, zinc & selenium
water - ((3.86 + 8.58)/2)*.85 + .125*(((.2299-.104)/100)*1000 + ((1.1-.05)/100)*1000) = 6.756875 mg

potassium
water:
i'm going to use this source to pull out an average of data for lakes huron (.939) & erie (1.431), as the detroit "river" is what connects the two, and potassium levels seem to increase moving through the great lakes basin and out into the st lawerence:

magnesium is next.
disclaimer:
i've gone to town with a few things - i'm not making up vitamins but rather filling things in. i mean, there's all these "missing vitamin names". what were they, exactly? it also gives me an excuse to work in a few things like choline that are hard to otherwise define as they are essential in some amount but not technically vitamins.
note that these numbers are scavenged and should be interpreted approximately. that's partly why i'm aiming to overshoot on most of it.

daily:
2 ) pasta salad bowl:
- one tbsp of imitation bacon bits (isoflavones, maybe)
- olives?
- red clover (if locatable or foragable, for phytoestrogens)
- alfafa?
- rice bran is similar to sunflower in b5, but lower in omega-6 and lower in choline. also, less e. it would be better if i find myself strictly concerned about b5, but in the pasta bowl. this seems unlikely.
- dried whey is a little lower in both b5 & higher in choline, but also has a little b12 & has almost no fat. it's almost like the missing part of the yeast. i'm having trouble finding it though and don't think the isolate available at bulk barn is comparable. it seems to be largely seen as a waste product in yogurt production. it may be broadly useful across plates.
- broccoli?
3) eggs:
- salami (45 g) (25% b1, 12% b3, 5% b5, 11.5% b6, 0% b9, 20% b12)
- rice (100 g) (60% b1, 35% b3, 4% b5, 6% b6, 69% b9)
