i'm looking at the label on my dressing and i'm thinking "this can't be that bad". but, it doesn't tell me anything....

water, soybean oil (contains citric acid), white vinegar, parmesan & romano cheeses, frozen egg yolk, sugar, salt, garlic, spices + mustard, corn starch, lemon juice, anchovy paste, phosphoric acid, seasoning, xanthan gum, potassium sulphate, dried onion, dried garlic, modified milk ingredients, lactic acid, natural flavour, calcium salt

soybean oil has about a 7:1 6:3 ratio, which is the wrong direction, but not so bad. i mean, it could be a lot worse. i'm wondering if i can get flaxseed dressing or something.....

if i'm putting ~75 g on there, and it's ~40% oil, i should get about an ounce of soybean oil per serving, which will give me about 10% of that precious, scarce vitamin e. there should be 1-4% of a, b2 & b12 from a small amount of cheese. and, frozen egg yolk should provide a bit more a, b2, b5, b9 and b12.

i want to replace this with a source of 3s, if i can. and i wish i had clearer numbers.

but, it's not that bad....

i used casear dressing as pasta sauce because i was trying to make it fattening, without going overboard. it's not as crazy as alfredo sauce. i also used it as a mayo replacement for tomato sandwiches, and tuna.

my typical serving would actually only have about 15-25% of the daily value for saturated fat.

so, like i say - i'm going to try to improve this, based on a different set of criteria than i previously had.

...but it's just not that bad....
