how do i make my nachos? it's been a while, so i'll repost it.

this is nachos as a meal, not a snack.

start with doritos. i prefer the zesty cheese, and i like the dill pickle, but it's disappeared. i'm trying the guacamole tonight and it's not bad. pick the doritos you like, or use tostitos if you insist. you can either do this by using two snack sized bags (they don't have to be the same type) or one regular sized bag, which should be a little more than you need. spread the chips across a plate.

in a separate bowl - it should be pretty big - mix up

- 1 lime
- 1 beet
- 1/2 tomato
- 1/2 red pepper
- 1 avocado
- 2 cloves of garlic
- fresh dill
- 1 tbsp of cumin, oregano, cayenne powder and paprika, each
- some pepper
- a lot of frank's

mix that up good and then lay it over top of the chips.

add the following on top

- 2 slices of crumbled, fried bacon or other meat, like chicken. don't use bacon bits. 
- 1 tbsp of hemp seeds
- 1 tbsp of nutritional yeast (with b12)
- 200 g of grated marble cheese*

microwave for two minutes.

add caesar dressing (i prefer this to sour cream, but it's up to you) and more franks.

i eat it with the orange/grapefruit juice (75/25) mix.

* you could substitute for the cheese. the other night, i used 120 g of mozarella, 50 g of monterrey jack and 30 g of cheddar, because that's what i had to use. i prefer the marble for this application, but there's no right answer to the cheese. 200 g is about the right amount, though; you may want to use more, but don't use less.
